Juicy Skillet Chicken for the Perfect Pasta Night!

You know that moment when your pasta is looking amazing but the chicken… not so much? Dry chicken can ruin the whole vibe. Not here, friend. This recipe is foolproof and makes juicy, flavorful chicken that’s perfect for topping your creamy alfredo or any pasta dish.
📝 What You’ll Need
2 chicken breasts (boneless & skinless)
2 cloves garlic, smashed
1 teaspoon salt
1 teaspoon paprika
1 teaspoon dried oregano (or parsley)
A pinch of black pepper
2 tablespoons butter (plus a little extra for basting)
⏳ Step 1: Season & Chill
Put your chicken in a tupperware or bowl and add garlic, salt, paprika, oregano, and pepper. Toss until well coated.Pop it in the fridge for at least 3 hours (overnight is even better). This is where the magic starts — the chicken is basically taking a spa day.
🔥 Step 2: Sear It Right
Heat a big skillet over medium-high heat and melt the butter until sizzling.Lay the chicken in the pan (carefully — no butter burns allowed) and immediately turn the heat to low.

Cover the pan with a lid and let the chicken cook gently in that buttery steam.Every few minutes, spoon the butter over the chicken like you’re giving it a little butter bath.Flip occasionally until both sides are golden brown and beautiful.

Grab a meat thermometer and check the thickest part of the chicken — you’re looking for 160°F (71°C).Once it’s there, remove it from the pan and let it rest for about 5 minutes (yes, it’s hard to wait, but trust me, it keeps the juices in).
🍽️ Step 5: Slice & Serve
Slice the chicken into strips, sprinkle a little fresh parsley on top, and serve it over your favorite pasta.

Don’t rush the marinating time. Even a quick 3 hours makes a big difference.
Keep it low and slow. High heat = dry chicken.
